On your account's statements there should be two days: The posting day
and the effective day. The posting day is the day the transaction
appears on your statement, the effective day is the day when the money
is considered transfered from or to that account and is used for
calculating interest. For GnuCash you most likely need the effective
day.

If the effective days also differ, you can create a bank account
"Incomplete Transactions" in GnuCash that can hold the money during
that days. That way the sum of your assets (bank account, credit card,
active transactions) remains the same, whereas the single accounts are
in sync with your bank.
