I recently converted from RH 7.3 to Debian stable.  The version numbers
are very close, if not identical (Debian stable Gnucash is at 1.6.6; I
can't remember what version RH 7.3 used, but in any case my data file,
created under the Gnucash version in RH 7.3 did not give me any trouble
when opened up and used in Debian).  I've been using Gnucash in Debian
stable for several months now, no problems.

You also asked about the latest stable version of Gnucash running on
Debian stable.  The latest stable version of Gnucash is NOT in the
stable branch of Debian, so to do that, you would need to get your
Gnucash from someone other than the offical Debian project (try
www.apt-get.org), OR use apt-get "pinning" to run a later version under
stable (I'd personally be hesitant to do the latter, because I'm not an
expert, and I'd be afraid of something else breaking, since Gnucash
depends on so many packages).  I have resolved to just wait until the
next stable release of Debian, since it is apparently not too far off.
