adding accounts to full checkbook

When I first started using Gnucash, I had a lot of transactions I wanted to add, 
and was in a hurry, so I didn't create any accounts except the default ones, and 
have now got four months of transactions, all assigned to the account "Assets".

It's not visibly doing double entry, but I would like it to do so now, and to 
have each transaction assigned to the proper account.

I'm still pretty new at Gnucash, and it seems to me if I just try to do this by 
muddling through it, I will mess things up.  Does anyone have any tips for me 
about this?  Any articles on the web?  I'm not able to get clued in by reading 
the Gnucash help.

The checking account I'm tracking had never been tracked in another program such 
as Quicken.
