adding accounts to full checkbook

Well, once you have an account set up you have to add
accounts by hand.  The hierarchy druid only works for
new files.

Double entry is accomplished by creating a bunch of income/expense
accounts (which correspond to Quicken Categories) and all your
transactions are transfers between an income/expense account and your
checking account.  Gnucash would have complained loudly if you didn't
do this.  The double-entry isn't visible unless you recognize that the
"transfer" column equates to the doubleness.

If your only Asset account is your checking, you can just keep it
as-is, or you can build an Asset hierarchy and move the existing
account into the hierarchy.
