Because it's a dumb way of handling security.

Assume for a moment that gnucash "protects" your data
via some sort of encryption. Let's even say it's good encryption, you have
a good password etc.

Your son logs in as you, burns his CD and accidentally deletes your
GnuCash data.

Sure, you might have a backup, but why create such an insecure setup in
the first place?

Give your son his own login and be done with it, it's so simple.
