I have fink source install with unstable tree enabled, in terminal:

funk list gnucash

gives:
i   gnucash          1.8.8-12     Personal finance tracking program
i   gnucash-dev      1.8.8-12     Development headers and docs for gnucash
i   gnucash-docs     1.8.3-1      Documentation for gnucash
     gnucash-hbci     1.8.8-12     Home Banking (Germany) modules for 
gnucash
     gnucash-ofx      1.8.8-12     OFX import module for gnucash


I believe:
fink install gnucash-docs, will provide what you're looking for.

But I'm not sure how that sits with fink commander and/or a binary install.
