Your plan would work, but it might cause you issues down the road
because gnucash cannot re-assign transactions en-masse. So, if you
eventually want to split into multiple expense accounts (to keep
finer-grained accounting of different types of expenses) then you'll
have a lot of work to reassign all the transaction.
Take a look at the default account hierarchies in the File -> New File
druid and pick one that makes sense to you.
