Disabling 2x entry

You almost never want to disable double entry.  For just
recording your bank and credit card transactions, the
simple way to think of double entry is to specify what
type of expense each item is.  You enter that expense
type in the transfer column of the checkbook register.
That expense type (or income type) notation is the double
entry.

If you don't care about tracking how much you spent
on "Expenses:Gasoline" vs.  "Expenses:Books" vs.
"Expenses:Tax Deductible:Home mortgage interest" and would
rather treat it like a single entry paper register which
does not total those items conveniently for you, you
can leave the Transfer column blank and check the box
"Let GnuCash add an adjusting split" for each of your
transactions.  Gnucash will then put the adjusting split
into the "Imbalance-USD" account for you, so you don't
have to specify a specific double entry account.
