gnucash & OS X 10.4

Sure looks like dependency hell to me. We're past my level of
understanding fink at this point, but I'll offer a few facts:

My system still has gal19-shlibs installed, along with gal21 and
gal21-shlibs. I first built gnucash about a year ago, and gal19 and
the corresponding shlibs file are what gnucash needed then.
Apparently, a later upgrade to gal21 didn't conflict with the old
shlibs file.

Most of what I have in my fink tree is there because of gnucash, so
old files laying around are probably from a gnucash build.

At this point, if you specifically install gal19-shlibs, fink might
decide it conflicts with gal21 and remove those. Then you get to
reinstall gal21 and hope the info file hasn't been updated to declare
a conflict between the shlibs versions.

It could also be that you're seeing a conflict between old gnome
components and Tiger that others haven't run into.

As I say, I really don't know what I'm talking about at this point,
but if you do succeed at getting gnucash to build by having multiple
gal shlibs installed, that's worth a note to the maintainer to try to
iron out the dependency problem.
