Function to override Quick-Fill ?

Nope, there's no way to do that. You have a couple options:
1) let it autocomplete, and then use the right-click context menu to
delete the extra splits in the transaction.
2) use different descriptions to differentiate the different auto-completions
3) continue doing what you're doing
4) supply a patch that implements the function you want.
