Three major options:
1/ install gnucash everywhere you want to use it, then have some network-accessible data file (network share/drive, revision control, &c.)
2/ install gnucash everywhere you want to use it, then have your data file on the thumbdrive.
3/ look into gnucash portable¹; have both gnucash and your data file on the thumbdrive.
