I suspect not -- unless GnuCash itself can be invoked in a non-GUI way. 
  The C and guile bits of GnuCash appear to be tangled together in a way 
that is beyond my comprehension.

I'll try to help with that.  Can someone point me to where and how such 
documentation should be done?
