Business: How do I set up multiple Profit/Loss centers?

First, thanks to all the developers of GnuCash.

I'm new to it.  I volunteer at a farm that wants to know the profitability
of each of its product areas:  Beef, Lamb, Pork, Chicken Broilers, Eggs,
Turkeys.

I set up Sub-accounts for each under Expenses, and then sub-sub accounts for
each expense category (grain, hay, hauling, slaughtering&processing, etc.)

As I get further into the program, I'm thinking that won't work...  I see
Chargeback Project - Job.  Is that the feature I should use?
