The data files can be moved around freely, just like any other document on 
your PC. So you can go right ahead and move all your .xac files to the 
Documents folder. The next time you start GnuCash, you will probably have to 
use the File->Open menu command to load your data again from your Documents 
folder as it won't find it there automatically.
