Debtors and Interest

It depends on your defition of "handle".

GnuCash can certainly keep track of it, however it probably cannot
compute it for you if the balance is changing.  Part of the reason is
that GnuCash does not have a "balance-as-of-date" function for use in
the interest-computation algorithms, so it cannot deal with changing
balances to compute interest.
