I use gnucash on a USB stick under the PortableApps environment (www.portableapps.com).  If you have the current PortableApps environment installed on a stick, you can very simply install gnucash from the "Office" section of the list produced by clicking "Apps" and then "Get more apps"

I have been using this now for a couple of years, and find it very satisfactory.  The only downside is that it can take a while for gnucash releases to find their way into PortableApps, so one is not usually running the very latest version.  For example, I am currently running 2.4.6, but the latest gnucash release is 2.4.8.

A couple of tips for running this.

a) I set up my accounts data in <USB_drive_letter>:\portableapps\gnucash\data\accounts.  Then if I want to take a backup, I simply copy the data directory, and that stores my current accounts plus the current application state information all together in one place.

b) You need to ensure that the stick is given the same drive letter wherever you use it, otherwise gnucash will not be able to find its data.
