Hi,

If you used the default XML files to store your test data, then removing the 
data is a simple case of locating and deleting the relevant files - hint: 
search for .gnucash file extension if you are unsure where you saved your 
files!

If you have put the companies into a MySQL database, then I think that "drop 
databasename;" at the command prompt should do the trick, but be careful! 

I'm not sure of an easy way to remove the entries in the most recently used 
files bit of the menu, but I have a feeling that trying to open a non-existent 
data file removes the entry.
