Which one?  It's possible to get an exchange dialogue for each
transaction, and I sure hope that those are not irrelevant, since I've
been using it (to my accountant's chagrin) for the entire time I've
been using GNUcash.

I wish I had practical suggestions (if I did, I would offer them --
it's a hard problem), but I have to say that the FX features in
GNUcash are extremely unintuitive.  You should make several trial
entries in various test/fake accounts before trying to use this
feature.
