When you double-click on a GnuCash file in the finder, GnuCash starts, 
but it uses your most recently opened file, not the file you 
double-clicked on.

If you had double-clicked on a backup file, and in fact used your normal 
account file, that could be the source of some confusion. In that case, 
you also wouldn't see a ...gnucash...gnucash file.
