Yes.

No.  GnuCash is a single-user system.  Only one person may be attached
to the dataset at any particular time.

To some extent, yes, depending how customized you want/need it.  There
are multiple invoice reports, including the "Printable Invoice", "Fancy
Invoice", "Easy Invoice", and "Tax Invoice", the latter an e-guile
report that is probably the easiest to adjust.
