I use Ubuntu with the Unity desktop.  It works well for me, along with GnuCash.

Could it be that the window was simply maximized?  Unity merges the titlebar of maximized windows with the top panel of the desktop.  This provides more space on the screen for the meaningful content of the application.  When the window is not maximized it will have its own traditional title bar.

Unity also merges the menu bar with the top panel of the desktop, likewise to maximize the useful space on the screen.  The menu becomes visible when the mouse is over the top panel, or when the menu is activated via a shortcut (I often use Ctrl-F for the File menu).  The menu bar integration can be disabled, per process, but I don't know how that would change when you reboot.

I haven't looked for the option, since I don't have a problem with it, but I recall from many years ago that GNOME had an option to control whether toolbar buttons showed icon only, icon and text or text only.  That option may still exist in GNOME (which is the underlying application framework used by GnuCash).
