Six levels!  I have never felt the need for anything like that.  You
can mark an account as hidden by editting the acccount (right click on
the Accounts page) and setting Hidden, and if you also select
Placeholder then you will not be able to assign transactions to it.
To re-show it then in the menus select View > Filter By > Other and
check Show hidden accounts.  This is really intended for hiding
accounts that are no longer used rather than temporarily hiding ones
that are just not used much.

I don't know wother there is a similar feature for stocks and funds.
