For your first test file call it test01 and save it to the desktop by
clicking on Desktop under Places.  Notice what appears next to the
backslash below the filename.
For your second test, create a folder called GnuCashTestData on your
desktop to save the file in.
For your third test, decide where you want the files to remain for the
long term.  That should be someplace under your user name.
