Full marks to John Ralls! It looks like the problem I observe is
limited to Mac OS X users before 10.6 (e.g. 10.5.8) and has a
work-around.

I confirm that on my Mac OS X 10.5.8 system, if I:

1. Delete the previous copy of GnuCash 2.6.0 (or 2.4.14)

2. Re-copy GnuCash application from the .dmg to the /Applications folder

3. Delete (or in my case rename to a safe name XX_gtk.immodules_XX)
the gtk.immodules file, as in:
rm /Applications/Gnucash.app/Contents/Resources/etc/gtk-2.0/gtk.immodules

4. Run GnuCash 2.6.0 (or 2.4.14) by double-clicking the Application icon,

then the observed behaviour becomes is the same as expected. I can
enter text; there is no longer a system beep at each keypress.

Further discussion at bug reports:
(for 2.6.0 ) https://bugzilla.gnome.org/show_bug.cgi?id=721762
(for 2.4.14) https://bugzilla.gnome.org/show_bug.cgi?id=721765

I can't wait to explore 2.6.0's goodies!
Thanks, everyone, for your help. Especially John.
