How to setup Gnucash as a business software?

What I do for payroll is calculate the wages and all deductions in separate software (originally a spreadsheet - OpenOffice), and then enter it into the Chequing Account register as a split transaction.  There is an example in the manual/tutorial.

What the calculations look like is different in every country, and for some countries differs depending on what part of the country, or even what line of business.   So even in Quickbooks that comes only in a more expensive version, not in the basic version.
