Matching transactions

Maybe I asked the question incorrectly before about the Bayesian stuff.

When importing a QFX file into GC for a credit card GC labels many of
the transactions as belonging to the entirely wrong
category/account/transaction.

Such as- Sunoco car fuel gets labelled "food" into the food account
which is entirely wrong.

How do I get GC to properly, or more accurately, label a transaction
into the category it belongs?
