Since neither Gtk+ nor GnuCash have Sami translations the first won't have any effect; you'll still get Swedish. The second will get you Finnish since both Gtk+ and GnuCash do have Finnish translations; however, if there are strings which aren't translated in Finnish but are translated in Swedish, you'll get those in Swedish instead of English. Whether or not that will make you crazy probably depends on your fluency in each.
