Can't adjust width of last column

There's one cheat you can try to widen the column with the caveat that
I'm using 2.6.3 so it may or may not work in the newest version:

add a dummy transaction to the ledger you want to adjust (the
transaction can be deleted later) and make the value very large so that
the balance is also large.  Then double click the balance header to have
it autoresize to fit this new value.  Delete the transaction and the
balance column will be a new size.

I had to do this a couple times when I accidentally resized columns and
discovered the balance column can't be changed.

I also used a similar cheat to resize the Description column.  You
stretch out the column far to the right of Description by dragging the
right side separator of that particular column (in my ledger it's the
Transfer column).  Then pull the left side separator of that column
towards the Description column and the Description column will shrink as
everything is resized to fit into the window.
