Use this method if you expect to have no more than four sets of gnucash
books. The reason is that the "open file" menu will give you a drop down
list of the last four you had open making selection of which books to
open easy.
Like you, it is unpredictable whether I will want to (re)open the set of
books I last had open or open a different set. So far I have never been
keeping books for more than four entities at a time.
