Help with GNUCASH for some transaction options

Hi. I work in small hotel with restaurant  as account man. I have
professional external  accounting firm for true bookkeeping. I used to keep
my basic data (who owns me, who i own, ietc) in multiple excel files with
lot of cross referencing tables. i have separate POS program for generating
bills/invoice. I keep data for my boss. I got tired of that so i found
GNUCASH and thaks for good written instruction I set up data for GNUCASH.
And i like it. How ever i found some specific examples of transaction 
missing. So i need help how to do that kind of transaction. Il explain in 2
examples of what situation i encounter...

Example 1.
I have company A. I brought stuff from company A in value of 1.000€
Next day company A  came in my restaurant to business lunch and made bill of
360€ 
And of course they don't want to pay the bill, They want to value  of that
bill be removed from our debt toward them. So in the end of the day my debt
towards company A is 1.000€ - 360€ = 640€

Example 2.
I have company A. I have brought stuff from them in multiple bills total sum
1.000€ (for example bills 200€+300€+250€+250€). I made a deal with company C
to take over my debt form company A in total value of 1.000€. So at the end
of the day my debt towards company A is 0, and towards company C is 1.000€.  

How to make transaction like that in GNUCASH? I have read that in not
advisable to modify A/R and A/P
directly. I have never found anything like this. Thanks in advance for any
input on my 2 problems...
