Go to Menu->Administration->Software Manager->AllPackages and type gnucash
in the search box.
It will install 2.6.11 from the getdeb repository which is the latest stable
release.

Are you really using Linux Mint 7 or 17. If the former  that may possibly
explain many of your difficulties with dependencies.
