Entering cash-back purchases

If I understand correctly, the basic transaction is taking $21.75 out of
your bank. The question is how you want to account for the other side of
the entry.
To record the $20 and $1.75 as separate values, you should select the
SPLIT icon before making any entry of $21.75 out of the bank. Then you
enter $20 as cash on the next line and $1.75 as a third line. I accept
that Gnucash does not make it obvious but it does work. However it is
important to select the SPLIT icon when you are on a new blank entry
line. Otherwise it may remember a previous split!
