>From within gnucash with your data file open select File->Save as... and navigate to 
wherever suits you better. This works just like any other typical application you would use 
(Word, Excel,...).

I would recommend creating a subdirectory in your personal directory ("My Documents" 
on Windows I believe) and save your data file in there.

If you like you can later manually move the backup and log files from your desktop to 
that same directory using your file manager. But be careful not to overwrite your main 
data file in the new directory with the one on your desktop !
