Changing the right-most column width

Yep, done that MANY TIMES (and just now verified again w/ your 
instructions).  Drag the right border (the "vertical double lines") to 
the right, five INCHES past the right window border of GnuCash.  When 
the mouse button is released, the only column width that changes is the 
description.

Even if that were to work, it's a terrible UI.  And then, after all that 
fun, you have to do it again for the next transaction window.
