I guess it depends on what you mean by simple.
So far I need these three to catch everything I want in my GnuCash-ML
mailbox:

To or Cc contains @gnucash.org
To or Cc contains @lists.gnucash.org
>From     contains jralls at ceridwen.us

For some other mailing lists, more complex things are required.
