On Ubuntu 18.04 I did
sudo apt install flatpak
sudo flatpak remote-add --if-not-exists flathub
https://dl.flathub.org/repo/flathub.flatpakrepo

sudo flatpak install flathub org.gnucash.GnuCash
flatpak run org.gnucash.GnuCash

Then can right click - add to favourites to keep it in the launcher.
