If you are experiencing hangs or crashes with GnuCash, could it be the USB
stick? I keep reading that many USB sticks nowadays are often quite
unreliable.

I suggest it might be more fail-safe to keep the data file on the
computer's hard drive (and maybe also use a cloud utility that does a live
sync). Operating systems keep track of how reliable your hard drive is, but
those tests are often suspended or ignored for USB sticks.

You might devise a procedure or use a program that can backup the data to
multiple USB sticks, sequentially (so you rotate through several sticks
over time), AND ideally verify that the data was written correctly so you
know when a USB stick has become unreliable. I don't recommend relying
solely on a cloud service for backups, though they are quite handy when you
need to quickly "restore" a file from a few hours or days ago.

I don't use Windows so I don't know if it includes a backup utility, but I
know there are quite a few available that folks find useful.
