Even those legal implications would not be of that much of impact as legal authorities (in this case IRS) have subpoenaing power to get those records directly from applicable institutions, and extended lookback is applicable only if fraud is at play which you shouldn't be involved in any ways.

The facility isn't there because no one has written the code to do it.
There's a whole lot of complication and, as others have noted, no real functional downside to maintaining large data sets.
Stan's note about legal implications of maintaining older records is the first one I've heard that offers a more significant reason for removing old records. But that's jurisdictionally-bound, which will again limit the impetus for creating this tool.
