There are no nightly builds for macOS. Derek doesn’t have a Mac to build one on.
Homebrew just redistributes the bundle we create. You could set up MacPorts and build from git, but you’d have to run GnuCash from the command line as there’s no easy way to build an app bundle from a MacPorts build.
