As for the code repository, at the moment it doesn't matter, so use whichever you're more comfortable with.  We'll likely switch to using git for the "canonical" repo sometime this year, but Github provides a subversion interface so you'll still be able to maintain an svn checkout while you learn git.

You may find the doxygen docs at http://svn.gnucash.org/docs/HEAD/ helpful. I see that we need to update the header and probably a bunch of the other narrative material, but it's as good as it gets at the moment. You'll also want to look at http://wiki.gnucash.org/wiki/Development and http://wiki.gnucash.org/wiki/Roadmap .
