I'll answer this myself (Synaptic is really quite nice... I should have just 
tried it).
The GnuCash 2.6.9 from GetDeb for Ubuntu vivid (15.04) installs in Debian 
8.5.0 with no dependency problems.
(I'll update the Gnucash wiki.)
