Recording foreign transactions

I found where in the manual it says how to do what I want with my foreign 
transactions.

However, it says to create a cash account in USD and (in my case) a Security of 
canadian dollars.  But the Security field is gray in the new account dialog and 
the Security button is dimmed.  What do I need to do to enable it?

I'm sorry to pepper you with so many questions, but I'm very excited to finally 
be trying out GnuCash.  I'm sure that once I know what I'm doing I will be happy 
to help out others.
