Replying to my own message.
I just noticed that gnucash-docs installs the omf files in
/usr/X11R6/share/omf/gnucash-docs. Everything else on the system is
installed in /usr/X11R6/share/gnome/omf/...
*sigh* I should be able to fix this easily enough.
