Crash recovery granularity

I added Benoit's text to the docs at 2.7.  In fact, while I was there, I 
sub-section-ified 2.7 too.  Oh, and renamed it from "Backing Up and 
Protecting Data" to "Backing Up and Recovering Data".  Since the 
"protecting" data is automatic... it just seemed more important to 
emphasize the recovery possibilities.
