Easiest Linux distro to upgrade GC with?

Debian. every time.

Nothing beats apt for upgrading packages.

No pain, no gain. All the work with Debian is front-loaded. The installer is 
getting better all the time but setting up X seems to be the most common 
hiccough. 

Thereagain, I'm 100% biased.

Once installed, maintenance is zero, upgrades can be easily automated and it 
does just carry on running. The only time I ever stop these Debian boxes at 
home is when I want to upgrade the kernel. If someone could come up with a 
way of doing that without rebooting, I'd never have any downtime!
