Order listing in account by "Transfer"? Select and modify multiple?

Unfortunately, what you wanted to do was 'fink install gnucash2'. I'm
pretty sure you can do that now, and your data file will be updated
when you open it in the new version (but you can't take it back to
1.8.11 after conversion).

Keep a backup of the data file before you upgrade in case something
goes wrong.

For changing the Unspecified transactions: Open the Account named
"Unspecified", click on the account name in each transaction (i.e.,
Unspecified) and pick your savings account from the list, and click
the Enter button on the task bar. You can also tab into the account
name and start typing the designation of your savings account (usually
something like Assets:Current Assets:Savings, for which you should
only have to type A:C:S, or maybe a little more of each subcategory).
If your preferences are set judiciously, you can hit the return key
instead of clicking Enter.
