gnucash in german and spanish

That's one way.

Yes.  'env' is a command that performs a "setenv and run".  So this
would run "gnucash" in a new environment where it sets LANG=de.
You might also need to use "LANGUAGE".

Are you sure you have the German Locale installed?

It's fully based on your environment.  Fix your environment and
gnucash will take it.

I'm sorry you feel it's inconvenient that you need to have a working
german system locale in order to run gnucash in german, but that's
the way it is.  For 99% of the people out there (probably even more!)
the way it works is the right thing.  And for those remaining 1%,
it's just not hard to reset the environment to run gnucash differently.
