Yes, this is the correct form of the command, although you should set
LANG and LANGUAGE to the same thing.

This is ignorable.  Honestly we should just remove this completely
because it confuses more people than it helps.

Nope, this means you don't have the locale configured properly, so
the C library doesn't understand the locale you're trying to run
in.  This has nothing to do with GnuCash, and everything to do
with your computer.  You don't have the es_ES locale installed.
