The GnuCash software is good general purpose bookkeeping software. But 
there is an assumption made that people using it for "personal" 
bookkeeping have less experience/background in the fundamentals of 
accounting than those using it for "business" purposes. Thus the built 
in examples are more focused on "personal" use. If you want to use it 
for business you should (already) understand accounting fundamentals or 
be willing to learn them or have somebody else do the setting up of your 
books (suitable for your sort of enterprise).

Having software does NOT mean you don't need an accountant (if you don't 
know enough to be your own accountant). It makes sense to provide as 
much guidance as possible for the "personal" users as not common to have 
an accountant for personal accounting, to have that come WITH the "free 
software". Everybody should note that providing free software does not 
entail an obligation to provide free instructions how to best take 
advantage of that software for various purposes (a "user guide" and a 
"manual" are two very different things).
