Making a GENERAL point here. How you structure your chart of accounts 
depends upon what data you need to be able to easily display. Since in 
the US on your Federal Income Tax you need to be able to report each 
interest payer separately you might want to set up your chart to make 
that easy (you should be getting a statement from each -- but you want 
to verify that they specified the right amount? -- or you are needing to 
file quarterly)

Not fair to set up your accounts ignoring what data you need to be able 
to easily produce and then blame GnuCash for not being able to do so. 
And of course this is a general situation, not just interest. What you 
can bitch and moan about is when you need to be able to report in more 
than one way since the chart of accounts only allows for ONE 
hierarchical structure. But that's a problem shared by all "simple" 
double entry systems (a complex system might be simultaneously entering 
the data into more than one "set of books" -- these could have different 
structures and so produce different reports)
